quicker when engine isnt warm

Im beginning to realize that my engine runs quicker when it hasnt warmed up yet. I have a 2007 with the 2.7 V6. I know I should be letting the engine warm up before I really punch it but there have been a few times where I needed to get somewhere quickly and it always feels like the car has quicker 0-60 acceleration when the engine hasnt warmed up. Why is this, and why doesn't it run as quick when the engine is at normal temp.?
